Who doesn't love a little taste of the tropics? In winter it's a welcome escape from the Canadian cold. In summer it fits right in with weather.
Pineapple holds a special place in the hearts of a lot of Canadians - we are, after all, the nation that invented the Hawaiian Pizza. And while putting pineapple on our pizza may nearly cause international incidents, it just goes to show that we love this tropical fruit!
Pineapple is one of those items that appears trickier than you think because of it's thick spiky skin and hard core but don't let that phase you because fresh pineapple is a delight! We swear by one of these little pineapple corer/slicer doohickies to help us get a pineapple cored, peeled and slice in 20 seconds flat. But for a lot of these recipes, canned pineapple rings, chunks or tidbits will do you just fine.
In this pineapple recipe collection we have mix of sweet and savoury dishes that showcase this unique fruit. There's quick and easy Hawaiian Meatballs and 3 ingredient Chocolate Coconut Pineapple Rings. Or the fermented goodness two kinds of sauerkraut: Pineapple Pear or Pineapple Turmeric Ginger.
If you want a sweet treat try the Pineapple Nice Cream or the Creamy Pineapple Pie. Don't forget starting your day on the right foot with a Tropical Chia Pudding or a Pineapple Coconut Chia Pudding.
Pineapple is also a great topper for fish, chicken, tofu or pork. Try a Pineapple Peach Salsa to top of your tacos or Coconut Crusted Halibut with Spicy Pineapple Salsa. And of course, we have the favourites - an French Martini Upside Down Cake, Fresh Pineapple Margaritas and so much more.
So put a tiny umbrella in your drink, turn up some Rupert Holmes on the speakers (if you like Pina Coladas) and wear your flip-flops while you make one of these delicious pineapple dishes and dream of sandy beaches and palm trees.
