With our busy schedules and demanding lives grabbing takeout on the way home each night can be extremely tempting. If I gave into that temptation every day, I would never get to try new recipes and I don’t think my wallet or waistline could handle it! With this meal plan, you can enjoy the different, ethnic flavors of takeout while maintaining a healthy diet and reasonable budget. This meal plan includes loads of fresh produce that is in season and can be found at most farmer’s markets. So with these great ingredients and just a few quick tricks you can enjoy a delicious and healthy dinner, every day of the week.

Roasted Stacked Salmon

This is a go-to recipe for me, after a busy day and a frequent dinner request from my boyfriend. This recipe is based on a salad featured in the cookbook My Father's Daughter. I made some changes to the ingredients and cook times to make the recipe right for me, so feel free to make some changes of your own - like switching out salmon for tuna steaks, like I did in the picture!

Take-out can be so tempting on a weeknight, especially when you just got through a long Monday at the office. With this quick and easy Pad Thai recipe you can skip the take-out and still enjoy the authentic taste of this Thai Food staple! Or try a healthier version.

No Fry Salmon Spring Rolls

I have to admit, I was a little intimidated to work with rice paper wraps, but once I gave it a try it actually turned out to be pretty simple! These healthy spring rolls are the perfect way to enjoy this take-out staple, without all the calories that come along with deep frying!

These stuffed peppers pack a punch! Not only are they full of fresh vegetables and protein but they taste delicious! This is the perfect meal to use up some left over ingredients you might have at the end of the week and all you need is half an hour - could it get any better?!

Chicken Fajitas

Chicken Fajitas have been one of my favorite dishes since I was a child. It used to be because I could build the tasty wraps myself but now, as a working "grown up" I love these fajita's because I can come home and whip everything together in less than half an hour! And if you watch the cheese and sour cream toppings, it's a pretty healthy alternative to bringing home a burrito! Use any leftovers that you have frin last night’s Stuffed Peppers!

Homemade Pizza

Instead of ordering from the same old pizza place, why not try making your own! You can add your favorite toppings, use fresh & local ingredients and best of all, its lots of fun! Here is the recipe with my preferred toppings, but feel free to get creative and come up with your own pizza!
