Bellini Recipe Example: Chicken, Bacon & Pea Risotto
From "Bellini Addicts Recipes"
Ingredients
1 Onion cut into 8
1 Garlic clove, peeled
30ml olive oil
400g chicken breast, cubed into 2cm pieces
3 pieces of peameal bacon, cut into strips then cut in half
350g Arborio rice
1 litre chicken stock*
1 cup baby peas, thawed
50-80 grams Parmesan cheese
Method
Chop onion and garlic on speed 5, 10 seconds
Scrape down sides of jug, add oil, bacon and chicken, sauté for 4 minutes, speed 1, 100 degrees. Scrape down jug and repeat.
Add rice to jug, 2 minutes, speed 1 at 100 degrees (This is to coat the rice)
Scrape down, add stock. Cook for 20 minutes on speed 1, 100 degrees. After this time, check the rice. It should be starting to thicken up a bit. Add the baby peas and refasten lid for 5 to 10 minutes.
Add the Parmesan cheese and let stir on speed 1 for 1 minute.
*You can also replace 200mls of stock with 200mls of white wine.

This is interesting… I will just add that this is a copy of the Thermomix machine which I have been using and selling for the past 5 years… I haven’t seen this machine in person, or used it – but I have used the Thermomix for the past 5 years, and it has changed my life. My kitchen life, my food economy, and my health.
